Gregorios Southwestern Eggs Benedict O'le
4 eggs poached
Corn tortillas
Green onion sliced for garnish
Avocado sliced
Cilantro chopped rough
Refried beans (heated till hot)
Lyndy’s Colorado Salsa (heated)
Hollandaise Sauce (packaged) or fresh
3 Egg Yolks
4 Whole Eggs
1 Stick of Butter
1/2 teaspoon Lemon Juice
Cheddar Cheese
Tomatoes & Cilantro


Whisk egg yolks and lemon juice together in a small sauce pan. Cook on med low heat, on top of stove, whisking while adding 1 Tablespoon of butter at a time. Sauce will be thick and creamy when all of the butter has been added.

To plate it ...

Place corn tortillas (2) on the plate stacked, top with shredded cheddar cheese, refried beans, poached eggs(2) per plate, hollandaise sauce, Lyndy’s Colorado Salsa, more shredded cheddar cheese and then add the sliced green onions and cilantro.
Garnish the plate with the avocado and tomato.
